Spicy Fried Rice Noodles


Ingredients
1. One packet of white/brown rice noodles (10.5oz)
2. One spoon of ginger (finely chopped)
3. One bell pepper of any color (cut like thin strips)
4. Two carrots thinly sliced
5. 1/2 bunch green onions (cut)
6. 2 tea spoons of soy sauce
7. 1 tea spoon of brown sugar
8. 1 tea spoon of corn starch
9. 2 tea spoons of rice vinegar
10. 1 pinch of turmeric and 1 tea spoon of cayenne pepper
11. (Optional) some vegetarian sausage crumbles (Boca or Morning Star) or pre-fried tofu
12. Some cilantro leaves

Method:

1. Cook rice noodles in boiling water as per packet instructions. Drain, and pour cold water and drain and keep it aside.

2. Mix corn starch, soy sauce, brown sugar and vinegar. Add a spoon or two of water if desired.

3. Heat a small amount of oil in a wok at high heat and spread it around so that the wok is evenly coated with oil.

4. Add chopped ginger and fry for 10-15 seconds

5. Put turmeric and red pepper and fry for additional 5-10 seconds

6. Put carrots and stir. Add vegetarian sausage crumbles stir and add bell pepper and stir fry for about 10 seconds.

7. Add the mixture from step-2 and fry for additional 10-15 seconds. Add green onions and stir for additional 5-10 seconds.

8. Finally add the brown rice noodles and mix on the stove for another 10-15 seconds.

9. Remove from the stove and top the noodles with fresh cilantro or parsley

10. Enjoy. There is no need to add salt as soy sauce should have enough salt. Add salt only if desired.

If you are going to refrigerate it all, then add 1/2 teaspoon of virgin olive oil and mix prior to putting it in the refrigerator.
